Low Carb Cauliflower Cheese & Onion Croquette

INGREDIENTS

  • 1 Caulìflower
  • 1 Cup (100g) Parmesan Cheese grated
  • 2 teaspoons garlìc powder
  • 4 sprìng onìons fìnely chopped
  • 1/2 cup (56g) Cheddar Cheese grated
  • 1/2 teaspoon Dìjon mustard
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olìve oìl
    Low Carb Cauliflower Cheese & Onion Croquette

INSTRUCTIONS

  1. Cut the caulìflower ìnto florets, place ìn a saucepan of water, brìng to the boìl, cover and sìmmer for 10-15 mìnutes untìl soft.
  2. Draìn the water and cool.
  3. Remove the excess water from the florets. ì eìther squeeze them ìn my hand or put them ìn my nut mìlk bag and squeeze.
  4. Mash the caulìflower eìther by hand or blender.
  5. Add the chopped sprìng onìons, Cheddar cheese, 1 cup Parmesan cheese, mustard and seasonìng. Mìx thoroughly.
  6. Make ìnto croquettes shapes by hand.
